Omelette w kale and chorizo

Well, yes, it’s obvious there will be more in this dish than the title suggests. So let’s get to it!

Down your Vit C and Vital Greens ( I also have Vitamin D for my skin n bones)
Big glass of water while you boil the water for tea.

EQUIPMENT
Skillet, sharp knife, chopping block, bowl to mix eggs in, egg slice

INGREDIENTS
2 whole eggs, 1 egg white only
quarter chorizo chopped (it’s more for taste than bulk)
small bunch of roquette from the garden
2 sprigs thyme, stripped
4 roughly chopped button mushrooms
Freshly ground black pepper
olive oil

METHOD
Oil in skillet under a low heat
Add chorizo and render off the fat till it’s that yummy slight crunch
Throw in everything else except eggs.
Chill for about a minute while the mushies break down
Beat the eggs and add the eggs and pour over the above.

A word about eggs… They’re not noce overcooked, even as an omelette. You need to keep an eye on it all so it doesn’t go all hard and bleuch.
